Pop Up Dinner at Southland, the Menu for the 23rd of July

Howdy folks, here is the menu for your early perusal…items may be added at the last minute, of course..

Appetizers:

Artichoke Bruschetta with Homegrown tomatoes and roasted garlic

Pesto and fresh bread

Crab stuffed Mushrooms with fresh herbs and local cheese

Pimento cheese stuffed Local tomatoes

Entrees:

Linguine with your choice of sauce, small green salad and garlic bread…chose from rustic tomato sauce, creole sauce, meaty marinara, or creamy pesto….add grilled shrimp or chicken for additional charge

Homemade Veggie or Meat lasagna with your choice of sauce, a small green salad and garlic bread

12 inch pizzas:

Margherit: garlic infused olive oil brushed on the crust, sliced tomatoes, mozzarella cheese and topped with fresh basil

Jerk chicken (or shrimp for extra charge),  jerk sauce on the crust, red onions, shredded carrots, diced jalapenos(or habaneros if youre ‘mon enough) mozzarella cheese and fresh cilantro

Salsa rustica, homemade italian sausage, pepperoni, onions, mushrooms and mozzarella…with fresh oregano

White pizza with spinach, artichoke hearts, roasted red peppers, mozzarella and grilled chicken( or shrimp for extra charge)

Desserts?!?!?!?!?!?! still thinking about that one…

Southland Dinner is in the Books

Well we pulled it off. The dinner last night at Southland Books in Maryville, Tennessee was a success. It went smoother than our first attempt, we had a good crowd, and everyone seemed to leave happy, or at the very least the were nice enough to keep any whining to themselves. I started cooking my buns off around 9 in the morning, and finally hung it up around 10:30 with the occasional sanity saving game on Mario Kart on the Wii. I don’t know why, but nothing relaxes me more than playing Mario Kart and listening to the news on NPR which probably means I’m some kind of left wing, stimulation hound who can only block out the raging voices in his head by replacing them with computerized squawks and beeps and droning politicos waxing poetic in his ear. Or something like that. The only bad note is I woke up feeling a little puny, as they say around here, so I am going to head back to the bed and let the immune system do its thing, cause I have a long weekend ahead of me. I did manage to click a few pics this time, but most of them were blurry and awful but I picked out a couple that y’all might take a liking to.

Firefly Dinner

this is local, organic, free-range, frequently-told-they-were-wanted-and-respected-as-both-a-food-source-and-as-chickens-in-their-own-right, chicken halves, smoked over some local cherry wood (thanks to a certain Jeff Fisher look alike friend o’ mine)…incredibly simple, but they turned out downright mouthwatering…preparing these was a real lesson in the grace of simple food…the smoked breasts were a menu choice in a meal served in the woods, in the heart of the Smokies, during the time of the year where the fireflies flash in unison( one of only 2 or 3 places in the world where this occurs)  to the highest bidder from a charity auction…i took a risk in going rustic but it paid off…this chicken, along with some local beef, peaches, prosciutto, and much more proved to me that quality of ingredients and attention to details in the preparation outweigh fancy flourishes and overwrought and overpowering techniques…i wish i had pic of the meal itself, but i was too damn busy!!! oh , the dog is Sushi..she is an awesome Sushidoodle McSushipants and is too quick to be captured on film…the weird stone etching of a random middle eastern deity has since been removed from the backsplash replaced with a fine layer of bacon grease
