Steveishungry Goes Country! well, more country

Well folks, despite setbacks life goes on and that means Steveishungry will be Popping Up this month at Southland Books and Coffeeshop, back open under old management. The menu this time will pay homage to the Southern heritage I have at times tried my hardest to escape from, but which i now embrace wholly…sooo here is the rough draft for dinner on January 19th…call lisa at 984-4847 or , even better, sign up on facebook to attend the event…

APPETIZERS:

Pulled Pork and Purple Haze Slaw wrapped up in flour tortillas and grilled, served with moonshine peach dippin’ sauce

Sweetwater Vintage Cheddar and Scallion Biscuits with local honey butter

Benton’s Bacon and Sweetwater Valley Gouda stuffed Tater Skins

House Salad :By Greens with  Avocado Buttermilk Dressing, Benton’s bacon, Pico de Gallo and Fresh Croutons

Zesty Beer Cheese and Potato Soup with Corn Bread Mini Muffins

ENTREES…..

Locally Sourced Meatloaf with Portabella Gravy, served on a bed of Real Mashed Taters and one side item

Grilled Chicken Cordon Blue made with Benton’s prosciutto and Sweetwater Valley, and Moonshine Peach BBQ sauce, served on a bed of rice with one side item

Shrimp, Benton’s Bacon and Avocado Panini with Spinach, Marinated Artichoke Hearts, Sweetwater Valley Cheese served with one side item

Grilled Portabella, Spinach and Swiss Cheese French Dip served with    one side

SIDE ITEMS:

Mashed taters, with or without gravy

Fried Corn, creamy and wholesome

Well, there you go….I’m hungry just thinking about it…Prices will be more than reasonable, especially considering the quality of the local ingredients we’re going to use. This will be probably my best menu yet, methinks….This is the kind of food i can really put my self into..not literally of course, that would be gross.

Pop Up Dinner at Southland, the Menu for the 23rd of July

Howdy folks, here is the menu for your early perusal…items may be added at the last minute, of course..

Appetizers:

Artichoke Bruschetta with Homegrown tomatoes and roasted garlic

Pesto and fresh bread

Crab stuffed Mushrooms with fresh herbs and local cheese

Pimento cheese stuffed Local tomatoes

Entrees:

Linguine with your choice of sauce, small green salad and garlic bread…chose from rustic tomato sauce, creole sauce, meaty marinara, or creamy pesto….add grilled shrimp or chicken for additional charge

Homemade Veggie or Meat lasagna with your choice of sauce, a small green salad and garlic bread

12 inch pizzas:

Margherit: garlic infused olive oil brushed on the crust, sliced tomatoes, mozzarella cheese and topped with fresh basil

Jerk chicken (or shrimp for extra charge),  jerk sauce on the crust, red onions, shredded carrots, diced jalapenos(or habaneros if youre ‘mon enough) mozzarella cheese and fresh cilantro

Salsa rustica, homemade italian sausage, pepperoni, onions, mushrooms and mozzarella…with fresh oregano

White pizza with spinach, artichoke hearts, roasted red peppers, mozzarella and grilled chicken( or shrimp for extra charge)

Desserts?!?!?!?!?!?! still thinking about that one…

Grilled Cheese Pretzels?!?!?!

This is another chapter in my book “I’m Lovin’ This Panini Grill Thingy.” It goes like this:

It was a dark and stormy night. Iwashungry ad raided the freezer, finding a tucked away box of SuperPretzels from the grocer’s freezer section. These are hot pretzels with a little salt packet that you pop into the oven for a minute or two and then dip in cheese or mustard ranch dressing mixed with hot sauce. ANyway, i took two of the suckers, stuck a piece of cheese in between them and tucked them gently in to the Bad Assed Panini Grill Thingy. The results were, to say the least, munch-i-licious.  Like a grilled cheese, but with more salt. Needless to say, they went rather well with a cold adult beverage. I reckon one could make this without the Bad Assed Panini Grill Thingy, but that would just be stupid.

Ding! Ding! Ding! Its Time for more Chicken Wings!

I have this new panini grill thingy I got from, shudder to say it , Wally World, and i have to say it totally kicks ass. It has flat or grooved platens which are dishwasher safe. That’s right, platens. Look it up. I am a proficient Scrabble player so I already have, so HA! Anyway, this little sucker has a floating hing and can open up flat to form a griddle. It’s like a classy George Foreman grill but without bad-assed infomercials and its not angled to reduce the fat of my 20% fat hamburger that i bought because it had more fat than the ground sirloin. And it’s shiny, or at least it was until I got a hold of it. I am rough on gadgets and really most things. I go through shoes like Trump goes through Russian brides or a hot knife goes through butter or like a hot knife going through a Russian bride. You get the picture. I am the ultimate consumer because everything i touch i wind up breaking and have to buy a new one. Ask the Mrsishungry, she’ll tell you. Go on ask her dammit!

Where was I? oh yeah, so i made some wings. clipped the tips and made some broth while the wings cooked on the grill. I left the two sections connected until after cooking them so they’re easier to handle on the grill. You can also skewer them once you’ve straightened them out by popping that “elbow” joint out, and fit two wings per skewer. Looks cool and is much easier to manipulate on an outdoor, honest to god that thing is on fire, kind of grill. I simply seasoned the little suckers in some commercial Butt Rub brand BBQ salt mixture and slapped them on the aforementioned badassed panini grill thingy and let em cook away. Then they got tossed and sauced( YEAH RHYMING WORDS!!!) and i ate them. I was going to share them with the kids, but then I said to myself , i says, “Self, screw em!” so I ate all the delicious hot sauce and honey laden chicken skin bundles o’ joy.

Southland Dinner is in the Books

Well we pulled it off. The dinner last night at Southland Books in Maryville, Tennessee was a success. It went smoother than our first attempt, we had a good crowd, and everyone seemed to leave happy, or at the very least the were nice enough to keep any whining to themselves. I started cooking my buns off around 9 in the morning, and finally hung it up around 10:30 with the occasional sanity saving game on Mario Kart on the Wii. I don’t know why, but nothing relaxes me more than playing Mario Kart and listening to the news on NPR which probably means I’m some kind of left wing, stimulation hound who can only block out the raging voices in his head by replacing them with computerized squawks and beeps and droning politicos waxing poetic in his ear. Or something like that. The only bad note is I woke up feeling a little puny, as they say around here, so I am going to head back to the bed and let the immune system do its thing, cause I have a long weekend ahead of me. I did manage to click a few pics this time, but most of them were blurry and awful but I picked out a couple that y’all might take a liking to.

part Two Steamed and chilled shrimp and snapper marinated in tomatoes, roasted peppers and onions, fresh herbs and lime juice, served with chips 10.00

Smoked chicken wings with a sweet and spicy glaze Served with carrot sticks and herbed buttermik dressing 8.00

Baby portabella caps stuffed with artichokes, spinach, feta cheese, roasted garlic and fresh bread crumbs 8.00

The Southland Sandwich, part deux: Cuban bread stuffed with Roasted pork loin, smoked turkey, roasted peppers, spinach, purple cabbage slaw, garlic and cilantro oil, Swiss cheese…add bacon for an additional charge(.75)…served with chips 8.50

The Salad: Fresh spring greens, cilantro, red onions, toasted spiced walnuts, carrots, red cabbage, tomatoes and broccoli. Served with a Honey Lime Viniagrette 6.00

The Soup: Curried African Groundnut Stew…(peanuts, sweet potatoes, onions, garlic, onions, hot peppers, veggie stock, etc) with Toasted nuts and fresh herbed cream 4.00 bowl, 2.50 cup

Bacon Wrapped Shrimp with a Moonshine BBQ glaze, served with Chorizo Rice and Beans 12.00

Duck Taquitos served with Chorizo Rice and Beans 10.00
