Avocado French Fries…indeed!

fried avocado Ok . So I want to start off with an apology for this post. Never again will you be able to eat another fried potato and not be pissed off cuz you’re not eating this. Basically you take an avocado, peel it, slice it, dip it in an egg wash, dip it in bread crumbs, then fry those suckers!

They are fairly delicate and cook quickly, but they are soooooooo delicious. I tried them with flour and corn  meal and they were good as well, but the bread crumbs really gave it the crunch to match the warm creaminess of the avocado. I served it with a Sri-Racha yogurt ranch kind of dip stuff.

Bacon Chocolate Chip Pineapple and Jalapeno Cookies

Sometimes you have to take risks. Like when you really really REALLY  want to jump out of an airplane or you take up chainsaw juggling or play Russian roulette with a psychic. This however is not such a time.  Never has anything  been so obvious to me, not even the fact that my wife hates it when I grow my sideburns out. Basically it goes like this: Cookies+ Bacon+ Chocolate+ Pineapples+Jalapenos=Eating while You Make Noises normally reserved for R rated  movie love scenes.

So basically the recipe is kind of as follows. I always use the chocolate chip cookie recipe from the back of the Nestle package of chocolate chips. So, for specifics, look there. What i did to these little yummy monsters was to add some oven dried pineapple rubbed with brown sugar, some raw diced jalapenos, deseeded of course, and topped with delicious Candied Bacon. Candied Bacon. Say it again in your mind. Candied Bacon. I dice the bacon and toss it with brown sugar and some cracked black pepper, then you bake it around 350 degrees on some parchment paper. I pulled the cookies out a couple of minutes early and topped with the now delicious Candied Bacon. Candied Bacon. Candied Bacon. Oh, sorry. Then they go back in the oven for a minute or two. Be careful not to burn your bacon or your cookies. Do Not OverCook Your Cookies. Just don’t. In general, cook cookies until the tops just start to crack then pull them out and let cool on the pan for 5 minutes then transfer to wire rack. Anyway, these cookies are a twist on something familiar and combine flavors that pair up nicely but doubled up into a group in stead of two unrelated yet sumptuous pairs. Steveishungry Goes Country! well, more country

Well folks, despite setbacks life goes on and that means Steveishungry will be Popping Up this month at Southland Books and Coffeeshop, back open under old management. The menu this time will pay homage to the Southern heritage I have at times tried my hardest to escape from, but which i now embrace wholly…sooo here is the rough draft for dinner on January 19th…call lisa at 984-4847 or , even better, sign up on facebook to attend the event…

APPETIZERS:

Pulled Pork and Purple Haze Slaw wrapped up in flour tortillas and grilled, served with moonshine peach dippin’ sauce

Sweetwater Vintage Cheddar and Scallion Biscuits with local honey butter

Benton’s Bacon and Sweetwater Valley Gouda stuffed Tater Skins

House Salad :By Greens with  Avocado Buttermilk Dressing, Benton’s bacon, Pico de Gallo and Fresh Croutons

Zesty Beer Cheese and Potato Soup with Corn Bread Mini Muffins

ENTREES…..

Locally Sourced Meatloaf with Portabella Gravy, served on a bed of Real Mashed Taters and one side item

Grilled Chicken Cordon Blue made with Benton’s prosciutto and Sweetwater Valley, and Moonshine Peach BBQ sauce, served on a bed of rice with one side item

Shrimp, Benton’s Bacon and Avocado Panini with Spinach, Marinated Artichoke Hearts, Sweetwater Valley Cheese served with one side item

Grilled Portabella, Spinach and Swiss Cheese French Dip served with    one side

SIDE ITEMS:

Mashed taters, with or without gravy

Fried Corn, creamy and wholesome

Green Beans, chock full of garlic and bacon

BBQ Baked Beans, secret recipe!

5 Cheese Mac and Cheese

DESSERTS:

Banana Pudding

Whatever Else My Aunt Wants to Make

 

Well, there you go….I’m hungry just thinking about it…Prices will be more than reasonable, especially considering the quality of the local ingredients we’re going to use. This will be probably my best menu yet, methinks….This is the kind of food i can really put my self into..not literally of course, that would be gross.

Southland Dinner is in the Books

Well we pulled it off. The dinner last night at Southland Books in Maryville, Tennessee was a success. It went smoother than our first attempt, we had a good crowd, and everyone seemed to leave happy, or at the very least the were nice enough to keep any whining to themselves. I started cooking my buns off around 9 in the morning, and finally hung it up around 10:30 with the occasional sanity saving game on Mario Kart on the Wii. I don’t know why, but nothing relaxes me more than playing Mario Kart and listening to the news on NPR which probably means I’m some kind of left wing, stimulation hound who can only block out the raging voices in his head by replacing them with computerized squawks and beeps and droning politicos waxing poetic in his ear. Or something like that. The only bad note is I woke up feeling a little puny, as they say around here, so I am going to head back to the bed and let the immune system do its thing, cause I have a long weekend ahead of me. I did manage to click a few pics this time, but most of them were blurry and awful but I picked out a couple that y’all might take a liking to.

It takes a Working Man, to sing a Working Song

Just a quickie today..here are some shots of the kitchen I run. It’s old and run down in places, and I am not talking about Lindathecook, pictured making pizzas. She is actually a cousin of mine, which we didn’t know and had never met until I took the job. notice the “vintage”styling of our 35+ year old stand mixer. The kitchen and dining hall are housed in a building that used to be a gymnasium and it even has the original parquet flooring..or Parkay or parquae, I’m not really sure how to spell it. Looks like the old Boston Gardens’ floor that Bird and the Chief used to trod upon, if that helps you. Anyway, hopefully I will sneaking  in some more blog time into my schedule, so keep your eyes open and your ears turned on. Or any other body parts you wish to keep turned on. or open for that matter, really

Peanut Butter and Chocolate Chip Cookies…ummm I mean brownies

I’m not normally much of a baker but i found a great recipe for Double Peanut Chocolate Chip Cookies on the back of a bag of peanut butter chips, A.K.A. super delicioso rabbit turds from heaven…So, I assembled my ingredients like a good little baker and went about following the carefully laid out directions, something i Rarely do…somewhere around this point in time however, my absentminded self starting following directions for some Peanut Butter and Chocolate chip Brownies on the OTHER bag of Milk Chocolate chips, A.K.A. crazy awesome chunks of mana from the lord’s beard after a long day at the yummy mines…Soooooooo, i wound up making brownies by mistake and didn’t figure it out until it came time to spread the batter in the brownie tray, which it mentioned in step one…this is why i am not much of a baker…to be honest, these sucked…not sure when i switched recipes, but they came out of the pan like supersweet roofing tiles or hockey pucks covered in way too many chips…do not make this dish…good pictures though
