Avocado French Fries…indeed!

fried avocado Ok . So I want to start off with an apology for this post. Never again will you be able to eat another fried potato and not be pissed off cuz you’re not eating this. Basically you take an avocado, peel it, slice it, dip it in an egg wash, dip it in bread crumbs, then fry those suckers!

They are fairly delicate and cook quickly, but they are soooooooo delicious. I tried them with flour and corn  meal and they were good as well, but the bread crumbs really gave it the crunch to match the warm creaminess of the avocado. I served it with a Sri-Racha yogurt ranch kind of dip stuff.

Steveishungry Goes Country! well, more country

Well folks, despite setbacks life goes on and that means Steveishungry will be Popping Up this month at Southland Books and Coffeeshop, back open under old management. The menu this time will pay homage to the Southern heritage I have at times tried my hardest to escape from, but which i now embrace wholly…sooo here is the rough draft for dinner on January 19th…call lisa at 984-4847 or , even better, sign up on facebook to attend the event…

APPETIZERS:

Pulled Pork and Purple Haze Slaw wrapped up in flour tortillas and grilled, served with moonshine peach dippin’ sauce

Sweetwater Vintage Cheddar and Scallion Biscuits with local honey butter

Benton’s Bacon and Sweetwater Valley Gouda stuffed Tater Skins

House Salad :By Greens with  Avocado Buttermilk Dressing, Benton’s bacon, Pico de Gallo and Fresh Croutons

Zesty Beer Cheese and Potato Soup with Corn Bread Mini Muffins

ENTREES…..

Locally Sourced Meatloaf with Portabella Gravy, served on a bed of Real Mashed Taters and one side item

Grilled Chicken Cordon Blue made with Benton’s prosciutto and Sweetwater Valley, and Moonshine Peach BBQ sauce, served on a bed of rice with one side item

Shrimp, Benton’s Bacon and Avocado Panini with Spinach, Marinated Artichoke Hearts, Sweetwater Valley Cheese served with one side item

Grilled Portabella, Spinach and Swiss Cheese French Dip served with    one side

Well, there you go….I’m hungry just thinking about it…Prices will be more than reasonable, especially considering the quality of the local ingredients we’re going to use. This will be probably my best menu yet, methinks….This is the kind of food i can really put my self into..not literally of course, that would be gross.

Pop Up Dinner at Southland, the Menu for the 23rd of July

Howdy folks, here is the menu for your early perusal…items may be added at the last minute, of course..

Appetizers:

Artichoke Bruschetta with Homegrown tomatoes and roasted garlic

Pesto and fresh bread

Crab stuffed Mushrooms with fresh herbs and local cheese

Pimento cheese stuffed Local tomatoes

Entrees:

Linguine with your choice of sauce, small green salad and garlic bread…chose from rustic tomato sauce, creole sauce, meaty marinara, or creamy pesto….add grilled shrimp or chicken for additional charge

Homemade Veggie or Meat lasagna with your choice of sauce, a small green salad and garlic bread

12 inch pizzas:

Margherit: garlic infused olive oil brushed on the crust, sliced tomatoes, mozzarella cheese and topped with fresh basil

Jerk chicken (or shrimp for extra charge),  jerk sauce on the crust, red onions, shredded carrots, diced jalapenos(or habaneros if youre ‘mon enough) mozzarella cheese and fresh cilantro

Salsa rustica, homemade italian sausage, pepperoni, onions, mushrooms and mozzarella…with fresh oregano

White pizza with spinach, artichoke hearts, roasted red peppers, mozzarella and grilled chicken( or shrimp for extra charge)

Desserts?!?!?!?!?!?! still thinking about that one…

Mexican Corn Bread Stuffed with Deviled Eggs and Bacon

I’ve been toying with this idea for a while and tried a test run tonight of Mexican Corn Bread Stuffed with Deviled Eggs. I took some serious short cuts, but they still turned out pretty darn tasty, although the pictures did not. Basically i made some deviled eggs with thai chili mayo and bacon mixed into the yolks, folks. Then I tried to make little dough balls of mexican corn bread(from a mix) wth some cheese added to it, but it di not want to stick to the eggs, soo i wiped out a little bit of the bacon grease in the still hot cast iron skillet, threw a big ol’ spoon fulls of the corn bread mix into the bacon grease and stuck a deviled egg into the middle of it which was topped with the bread mix, which clings nicely to the top of the deviled eggs. Anyway, after it set for a second i popped the whole thing into the 375 degree oven for 25 minutes and they came out very nicely. I will work on this recipe in the future,as i think it holds promise, which is almost as nice as holding the door for an old lady. Next time around i will make the corn bread from scratch and try a muffin tin, and I may also move the bacon to the outside of the whole thing. It could be chopped up raw and covered in some brown sugar and chipotle chili flakes then spinkled on top of the muffins before cooking….that would work!! no one is allowed to do that yet. Ignore this post!!! Do not share this idea or make it and take cool pics and make me look like a weenie!!! Ignore ME

Saturday Morning and Scrambled Eggs

This is how my Grannyishungry made eggs for me when I was a young ‘un. For some reason, my folks pawned me off of the Hungry Grandparents every friday night. I assumed at the time they were off doing awesome adult things and having grand adventures, but i suspect it was more so they could have five minutes without hearing me babble incessantly about Batman or Shogun warriors or the Steelers. I would spend Friday night roaming Anderson Avenue, going down to Springbrook to ride on the Swings of Death, which were, if I recall, around 400 feet tall, and to try to ride the spinning wheel of doom and pain known as the self propelled merry-go-round. My cousin lived across the street and we would play 4 square and make recordings of radio shows using a turntable and a tape deck. I was always the disc jockey, of course.  My butt would be parked in front of someones TV in time for both the Dukes of Hazzard( FYI, I have the same birthday as John Schnieder, Bo Duke) and Knight Rider and I would always try to stay up late, but normally to no avail. However once 6 am rolled around, I sprung from the spare room and hit the remote to fire up the 25 inch color console for 7 solid hours of mind numbing animated goodness. I started off with Jot at 6, an odd religious cartoon about a talking dot, and then it was on to Rocky and Bullwinkle, maybe or maybe the 3 Stooges. They filled local space with syndicated toons untill the networks kicked in. This was before cable natch. And as i would liquify my brain and fill it with useless knowledge about the Justice League, who won the latest Wacky Races or the Laffalympics, who Thundarr had to ass-kick, who the Robotic Super Stooges would battle with( and I could go on and on and on and on and on and on, ad naseum, etc.) my Grannyishungry would prepare my all time favorite breakfast, which it still is since it is my all time favorite and this is still time. The menu was superb and simple and provided me with all i needed for a long stretch of toonage.

Cinnamon Toast, made with cinnamon sugar in a little shaker shaped like a baseball player or something like that, lots of butter and toasted on  one side only!!

Sausage links, god bless em!, if there was a god of course, but i digress and inflame.

The aforementioned pan scrambled egg.

And a tub of Coca Cola, with real sugar, and not Classic Coke…pure nectar and probably the root cause of my portliness on some level.

I would munch and watch until Wide World of Sports came on, then i knew it was time to go meet the day, unless of course they had the Globetrotters on.
